As a military wife, mother to two daughters as well as a blogger I have a lot on my plate. Weeknight dinners can’t be extravagant. I need something quick to throw into the oven but the crockpot is even better. I’ve shared my Baked Chicken Fajita recipe but this Salsa Chicken is an even better option for Taco Tuesdays.
The best part about this Salsa Chicken is how simple it is to throw it together. You put the ingredients into the crockpot and forget it! I’m telling you guys, it doesn’t get any easier than this. Two ingredients and maybe some salt and pepper. It’s a staple in our house and has even been used for big crowds for my kid’s birthday party.
All you do is spray your crockpot, put the boneless skinless chicken down, salt and pepper then pour the salsa on top of the chicken. Cook that for 6 hours on low for the best outcome (can cook on high for 4 hours) then shred the chicken. From there you load up your taco shells with all your favorite toppings and this amazing shredded salsa chicken and you have a delicious meal!
