This is one of the quickest meals I have ever made. PLUS it’s amazing! I have seen multiple versions of this meal but they always include some sort of cornstarch or frying of the shrimp. I am not a fan of eating fried foods these days so I adapted the recipe and it’s still pretty amazing.
Ingredients:
Sauce:
5 tbsp Mayonnaise Organic Mayonnaise
3 tbsp Sweet Chili Sauce
1-2 tsp Sriracha Hot Chili Sauce(to taste)
Shrimp:
1 lb large shrimp, shelled and deveined (weight after peeled) I used rinsed frozen uncooked.
1 Tbsp Olive Oil
Directions:
Heat a large skillet or wok on high heat, when hot add oil. When oil is hot add the shrimp to hot pan and cook tossing a few times until cooked through, about 3 minutes.
While the shrimp are cooking, combine mayonnaise, Thai sweet chili sauce and Sriracha. Set aside. For more heat, add more Sriracha.
Once the shrimp are cooked, turn the burner off and add the sauce to over the shrimp. Mix well then you are ready to add the shrimp (and sauce) over a bed of rice and serve.
(I used the 90 second Uncle Ben’s microwave rice. I put the rice in once I poured the sauce over the shrimp. This allowed the sauce to warm.)
