Healthy Breakfast Sandwich

A healthy and homemade breakfast sandwich. Now you can skip the drive thru and save time and money.

Ingredients

  • 1 Large Free Range Egg
  • 2 Patties All Natural Sausage Patties Fully Cooked
  • 1 Slice Cheese I use Lactose Free
  • 1 Organic Multigrain English Muffin Mine have Flax Seed in it as well
  • Salt & Pepper to taste
  • Cooking Spray

Instructions

  1. Grab your pan and spray it with your cooking spray. Fry your egg until it's the way you like it. I like mine not too cooked and I also like to add my salt & pepper right after putting the egg in the pan that way it cooks into the egg.
  2. While your egg is frying then put your english muffin into the toaster. I only toast mine for about 2 minutes because I am not a burnt toast kind of person but again, this is totally your preference.

  3. While your english muffin is toasting and your egg is frying then you can choose to microwave or fry up your sausage patties. I like to use two patties simply because they shrink when they cook.

  4. Once the english muffin is toasted put it on a plate and place the slice of cheese on the bottom. I place the egg on top of the cheese (this allows the cheese to melt a little better). 

  5. Once the egg is on I cut the sausage patties in half and place them on top of the egg. I do this because it helps to cover the whole sandwich instead of only getting a bite or two of sausage.

Recipe Notes

*** Side Note - I prefer to use the one egg frying pan over the mason jar lid method simply because it's easier. I crack the egg and let it cook, plus it's much easier to flip when the time comes but the mason jar lid does work. It's definitely harder to flip and the egg isn't as big as you can see below. ***
