My husband and I are seafood lovers. We seriously could eat seafood every night if he let me but that’s all part of growing up in Florida. Fishing is in our blood since we grew up living only 10 minutes from the beach and so close to Key West. While I love all seafood, salmon is one of my favorites. Cooking salmon right means you don’t get the fishy taste and it’s so simple to cook! Here is a fool proof way to make salmon and not over cook it (because then it’s uneatable)!
Directions:
First, DO NOT preheat the oven. I know, it sounds weird and it is hard not to but I promise this works. Now, take your salmon and put it on an aluminum foil covered pan. Make sure to spray the foil with Pam, especially if your salmon has the skin on. Next, cover the salmon with a light coat of Olive Oil. Sprinkle salt, pepper and sometimes I add some lemon pepper or garlic powder and onion powder. Once you’ve done that you put the pan in the cold oven, turn the oven on to 400 degrees and bake the salmon for 20-25 minutes.
This is one of my go to lunch meals. It is so quick and easy yet incredibly delicious. A huge bonus is that it takes me maybe 5 minutes to prep and 25 minutes to bake. The pieces here in Europe are pretty big so I bake them for 25 minutes. It’s also recommended you buy fresh salmon. You can use frozen but be cautious as to which ones as to avoid the fishy taste.
Today I ate half mine on top of a salad that I quickly threw together. Saute or steam some vegetables as another healthy lunch, or dinner, choice. This is the perfect meal for busy days or nights! Give it a try and let me know what you think. Make sure you check out my other recipes as well.
